Here are some good old fashioned recipes that are our family favourites.

I am often asked for this Boiled Fruit Cake recipe.
It is one of the selection of cakes that we serve with our "Country Teas"
to the many groups that visit our Art & Craft Gallery & Herb Farm.
It is easy to make & is wonderful baked in muffin sized tins.
This is our traditional Christmas Cake recipe.

Boiled Fruit Cake
Pre heat oven to 180C

1 cup of water

1 cup of sugar
120grams of margarine or butter
1 teaspoon of bi carbonate of soda
1 teaspoon of mixed spice
400grams of mixed dried fruit

Place all the above ingredients into a pan & boil for 12 minutes,
allow to cool.
When cool, mix in

2 cups of self raising flour

Spoon mixture into greased patty tins or muffin tins & bake for approximately 20 minutes.
Or
Spoon mixture into a greased & lined 20cm cake tin & bake for approximately 1 hour or until cooked when tested.
